Csilla’s Indian-Tai Style Quinoa

Serves 4

 

Main Ingredients

 

Carrots 4 shredded or diced

Corn 1 1/2 cups

Green Onions 2 whole diced

Onion 1/2 medium, diced

Quinoa 2 cups of

Snow Peas 2 handfuls

Water 4 cups

 

Seasonings

 

Cayenne sprinkled to taste

Salt sprinkled to taste

Turmeric sprinkled to taste

 

Sauce Ingredients

 

Coconut Oil 1 Tablespoon

Garlic 1 clove

Ginger 1-2 inch thumb

Honey 1 Tablespoon

Peanut Butter 2 heaping Tablespoons

Salt 1/2 teaspoon

Water 1 1/2 cups

 

Directions

 

Combine the quinoa, water, carrots, regular onions and corn in a pot and bring them to a boil.  Turn the temperature down to a simmer and allow it to cook for 20 minutes, if you’re using a regular pot; or 10 minutes, if you’re using a pressure cooker.

 

When the quinoa has cooked add the snow peas and green onions to the pot and mix them in.  Add your turmeric and cayenne after you’ve served the quinoa on to plates.

 

Directions for Peanut Sauce

 

Combine all of the sauce ingredients in a blender and blend them on high for 30 seconds.  Drizzle your sauce liberally over you quinoa dish after serving the quinoa on to plates.

It’s pretty fun to do these kinds of challenges when you tell other people about them.  It gives you more incentive to stick with it; Especially when someone else does a challenge with you.

Caffeine Story

In this video I share my recent encounter with caffeine in the form of yerba mate.

 

Although mate has some attributes that are beneficial, it contains caffeine, and drinking caffeine brings all of the highs and lows you have come to know by indulging in it yourself.

 

I don’t hold back in this video.  I share the full story with you and you can make use of it however you like.

 

Some of the people in the natural health field hide the things they think you won’t consider healthy.  I too, used to be a little afraid people might make assumptions about me if they saw me doing something that was out of the health box.

 

I came to find out people make assumptions no matter what you do.

 

I’m not afraid anymore.  Enjoy!

The answers are not lacking.  It’s true, there are so many answers, sometimes we feel overloaded with ideas and we’re more confused than when we started searching; Then we have more questions like, “Who’s right?” and “What really Works?”
